Farmhouse Breakfast Frittata

Fresh eggs are whipped together with garden vegetables—juicy tomatoes, tender eggplant, and vibrant spinach—then baked golden in a cast iron pan. Ingredients

  • (1/2 lb.) Pork Sausage
  • (4 slices) Bacon
  • (8 eggs) Dozen Eggs
  • (1 small, diced) Eggplant
  • (6-8, halved) Cherry Tomatoes
  • (1/2 cup) Spinach
  • (1 Tbsp.) Salt
  • (1/2 Tbsp.) Pepper
  • (1/2 cup) Milk
  • (1/2 cup, shredded) Cheese

Directions

  1. Preheat oven to 375°F
  2. Whisk eggs, milk, salt, and pepper in a medium bowl. Add 1/4 cup of cheese and set aside.
  3. Over medium heat, brown pork sausage in a 12" cast-iron skillet.
  4. Once browned, remove the sausage, drain and set aside. 
  5. Cook bacon in skillet, drain and chop.
  6. Using bacon grease, saute eggplant and tomatoes over medium heat for 4-6 minutes, or until softened. 
  7. Return sausage and bacon to skillet. Pour in egg mixture, sprinkle with remaining cheese, and cook for 5-7 minutes, or until bubbly and edges are slightly cooked.
  8. Transfer skillet to preheated oven and cook uncovered for 22-25 minutes. 
  9. Let cool for at least 10 minutes before serving.
