Sausage and Herb Meatballs
These Sausage & Herb Meatballs incorporate Intentional Farms pork sausage for a tender, flavorful bite. Fresh herbs, parmesan, and garlic bring farmhouse comfort to every forkful. Perfect over rice, tucked in flatbread, or served with roasted veggies for a hearty meal.

Ingredients

  • (1 lb.) Pork Sausage
  • (1/4 cup) Grated Parmesan Cheese
  • (1 Egg) Dozen Eggs
  • (2, minced) Garlic Cloves
  • (1, diced) Onion
  • (2 Tbsp.) Parsley
  • (1 Tbsp.) Rosemary
  • (1 Tbsp.) Thyme
  • (1 tsp.) Salt
  • (1 tsp.) Pepper

Directions

  1. In a large mixing bowl, combine pork sausage, parmesan, eggs, garlic, and onion.
  2. Add parsley, rosemary, thyme, oregano, salt, and pepper.
  3. Gently mix with clean hands or a fork until just combined—do not overmix (keeps them tender).
  4. Using a cookie scoop or spoon, form the mixture into 1 ½-inch meatballs.
  5. Place on a parchment-lined baking sheet. You should get about 12 meatballs.
  6. Heat oil in a large skillet over medium heat.
  7. Sear meatballs in batches until browned on all sides (about 2–3 min per side).
  8. Transfer to a baking dish and finish in a 375°F oven for 10–12 minutes until fully cooked.
  9. Garnish with fresh parsley and parmesan.

Serve alone or top spaghetti with meatballs for a traditional meal option that's as good for you as it tastes.
